Improver wheat varieties “made in Limagne”
“Improver” or “hard” wheat varieties are sought after by cereal transformers for their high protein content (greater than 13%) and the quality of their gluten. Mixed with flour, improvers enhance the quality of dough required for "French-style" baked goods.
