“New breeding techniques enable breeders to follow genes with greater precision in the creation of new varieties. Breeding "synthetic wheat" means re-building wheat from its three original genomes by identifying genes of interest which "unfortunately" have disappeared through the evolution of wheat as we know it today. Now these genes can be introduced with precision into new varieties to increase the genetic variability available for selection. The breeder's aim is to manage genetic resources and optimize valuable traits for growers, processors and consumers. In this sense, the plant breeder preserves and creates biodiversity and is at the heart of strategies for tomorrow's food”
